THE RETURN OF FLAVORS:LVIV’S INTERRUPTED CULINARY HISTORY

Abstract. The pudlication analyzes the achievements of M. Dushar in the field of culinary heritage of Lviv and Galicia. A short list of modern Ukrainian publications on the topic is provided. The reviewed book revives the traditions of Galician culinary art, since carefully selected recipes have been physically embodied here, which have received new life thanks to the introduction of new modern censuses into the book background. Recipes from culinary notebooks used in the book are also consonant with my family culinary history. M. Dushar’s culinary book is not only a collection of censuses, but also a witness to cultural history, recording local features, family ties and social transformations in society.
